Ancho Chile Pepper
Ancho Chile Pepper (refill)
The poblano pepper is a relatively mild chile pepper originating in Mexico. When dried it is called an ancho chile.
While it tends to be mild, occasionally and unpredictably this pepper can have significant heat. The drying process gives the Chile Ancho sweet and mild fruit flavors of dried plum and raisin with tones of coffee, licorice, and tabacco. Use these chilies in sauces and moles.
When dried this pepper becomes a broad, flat, heart-shaped pod called an ancho chile (meaning "wide" in Spanish), often ground into a powder used for flavoring recipes.
